Elephant head amaranth (amaranthus gangeticus), Denver, Colorado, 2002. I have a fascination with heirloom seeds, and one year I decided to experiment and plant this variety in my garden. All of our neighbors were curious about it. After finding this photo in my archives, I remember how much fun this plant is, and I think I should plant it again this year.
